Brining is a great way to tenderize lean meats. Not necessary but results in a juicier protein. Here is an easy recipe for a brine solution, maple syrup doubles as a great glaze ingredient when your roast is close to completion.
Ingredients:
Pork Loin, 2.5 lbs
Water, Quart (4 cups)
Salt, 1/4 Cup
Maple Syrup, 1/3 cup
Garlic, 3 cloves, crushed
Rosemary, 4-5 sprigs, fresh
Ginger, 3 tbs, fresh
Chili Flakes, 1/4 tsp +
Black Pepper, 1/4 tsp +
Combine Ingredients, roast must be submerged in container. Refrigerate for 6 -8 hours.
Pre- heat oven to 325°
Pat dry. Season all sides with S & P
Heat oil in Oven proof Skillet and brown all sides
Roast for 40 min
Remove and apply glaze of your choice (maple syrup and dijon mustard work well here), return to oven for additional 15 minutes.
